The Bleu Max

 

Here is a fun egg dish that we do at the restaurant that is quick and easy. It is great for breakfast, but having it for dinner is a special treat. The sauce we use is our famous hollandaise sauce, but if you do not want to attempt using a hollandaise, we have given you a quick and easy cheese sauce that will work just as well (incidentally, this cheese sauce is the base for the best Macaroni and Cheese you will ever have).

 

The Bleu Max:

Hashbrowns (recipe follows)

Thinly sliced ham (a good deli ham)

2 eggs cooked your favorite way

Hollandaise Sauce or Richs Cheese Sauce (recipe below)

 

 

Richs Cheese Sauce:

1-tablespoon butter

1-tablespoon flour

1-cup milk

1/4 teaspoon dry mustard

4oz. grated cheddar cheese

 

Melt butter, and then add flour. Stir until thick paste forms. Add milk and stir with small whisk until smooth and creamy; add mustard, cheese, and salt and pepper to taste. Set-aside until ready to use.

 

 

Hashbrowns:

2 russet potatoes, shredded

1-tablespoon butter

1-tablespoon oil

 

In a large skillet, melt butter and oil. Add shredded potatoes and cook until golden crispy brown. Put finished potatoes on plate and cover to keep warm in the oven.

 

To Assemble:

Place hashbrowns on each plate, then top as follows:

Ham

Eggs

Cheese Sauce (or Hollandaise)

 

Serve with fresh fruit salad and choice of toast.

 

 

For Macaroni and Cheese -- just cook some macaroni all the way through. Spray a baking dish with Pam or another stick-free coating spray. Toss the macaroni in the cheese sauce and pour into the baking dish. Top with grated cheese and bake in 350-degree oven until brown and bubbly.  Serve with salad or fresh vegetables. Yummy!!
